Pasta Salad, a re-mix recipe
This is the recipe of a re-mix pasta salad I made the other day.Ingredients:
For the paste
1. AlmondsÂ
2. Cashew
3. Walnuts
4. Fresh Basil (I used fresh Purple basil)
5. Fresh oregano
6. LOT of olive oil
For the salad
1. Pasta (I had a bow shaped one)
2. Apple
3. Pineapple
4. cucumberÂ
5. Flower (phul kobi)
6. Cabbage (patta kobi)
7. Green peas
8. French Beans
9. Black pepper
10. Salt
11. Honey (optional)
12. Lemon
Method:
1. Make the paste, add all the ingredients in a blender and blend to a fine or coarse paste, depending on your taste
2. Use a lot of olive oil
3. Cut the fruits and vegetables into bite sized pieces.
4. I cooked the vegetables in a microwave with a little olive oil for a min or so, just to make them a little tender, yet retain their crunchyness.
5. Add all the vegetable and fruits in a big bowl, add the paste and toss the mixture
6. Add the salt and black pepper
7. You can also add a little honey if you like it sweet
8. Squeeze in a lemon
9. Add the cooked pasta and mix again
10. Cool it in a fridge
11. Serve cool / chilled :)
